velvet cake

2 c sugar
1/2 c vegetable oil
2 eggs
2 tsp vanilla
3 c all purpose flour
1/2 c dutch process cocoa powder
1 tsp salt
2 c buttermilk
2 tsp vinegar
2 tsp baking soda


for red velvet, substitute food coloring for some of the buttermilk


cream sugar and oil, add eggs one at a time until incorporated
add vanilla

sift dry ingredients (flour, cocoa, salt) together
Alternate adding dry mix and buttermilk until all is combined, scraping sides with each addition
mix vinegar and baking soda and add to batter.  make sure it is thoroughly incorporated.
