4 oz veg oil
12 oz brown sugar
10 oz ripe banana
2 eggs
11 oz ap flour
2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp salt
1 c buttermilk
- cook butter until deep brown and cool off. Measure 4 oz of brown butter and if there's any left over, reserve for other uses.
- Cream butter, oil, and brown sugar in mixer.
- add bananas and mix on high speed to mash thoroughly
- add eggs and blend
- sift dry ingredients together
- alternate adding dry mix with buttermilk until all incorporated. Bake at 325 for 30 minutes or until toothpick inserted comes out clean.
