banana cake

4 oz brown butter (about 6-7 oz of butter)
4 oz veg oil
12 oz brown sugar
10 oz ripe banana
2 eggs
11 oz ap flour
2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp salt
1 c buttermilk

  1. cook butter until deep brown and cool off.  Measure 4 oz of brown butter and if there's any left over, reserve for other uses.  
  2. Cream butter, oil, and brown sugar in mixer.
  3. add bananas and mix on high speed to mash thoroughly
  4. add eggs and blend
  5. sift dry ingredients together
  6. alternate adding dry mix with buttermilk until all incorporated.  Bake at 325 for 30 minutes or until toothpick inserted comes out clean.
